00:25 Welcome to another Healthy Living Cooking Program.
00:29 My name is Elizabeth Serra and I'm happy to have you with me.
00:32 And also Jeweldia Kimpton, Welcome. -Thank you.
00:35 Glad you're here to demonstrate to us today.
00:38 - And what will you be demonstrating now?
00:41 - Today we're going to do Cherry Ripe Slice.
00:45 So, we have the base, we have the filling,
00:49 and then we have the topping.
00:51 It has to be three layers. So, the base is very easy
00:58 we're just going to use it, put it in the blender
01:01 together with a little bit of salt.
01:06 - Maybe I should tell the viewers while you are doing that
01:09 that the recipes are on our website www.3abnaustralia.org.au
01:14 so you won't need to write down the ingredients
01:17 and the quantities.
01:18 - We have dates here and they're pitted dates. -Yes.
01:24 You better warm it up a little bit if it's not that soft
01:29 because otherwise, it's not that warm it cannot bind
01:32 properly the nuts. We have roasted pecans
01:38 should have a better texture and nice smell.
01:43 So, a little bit of salt and then we will blend.
02:19 I always turn everything off when I blend because I feel
02:26 that it's part of safety even though I do pause I don't really
02:30 trust it. -Yes, we don't want any injuries in the kitchen.
02:36 - True. And you see, we use dates because it helps binding
02:46 the nuts and to make it...Oops, I just put everything down.
02:51 That's a good tip about heating the dates before you process
02:56 to help the stickiness and binding.
03:06 - Would you like this? - So just press it down
03:14 even it...This is the 20 and 30 rectangular tray. Centimeter.
03:24 - If it was a bit dry, would you add a little water sometimes
03:32 for the base? Or is it not necessary? -Not necessary,
03:35 but you could but it's not really necessary because it's really...
03:39 You can feel it, it is very moist.
03:43 It's not dry, it's very very moist.
03:47 So, if we don't press this down properly,
03:53 it won't hold the base nicely when you cut it up...
03:57 - You know what? I'm thinking if you were standing on this side
04:00 and I'm over here, then the viewers will be able to see
04:03 better. Umm, I can smell those roasted pecans. -That's right.
04:13 Then just press it down nicely because if you do it
04:18 right early straight away, it will crumble then
04:22 so you have to press and then you have to even it with the
04:24 spoon and it won't be a problem.
04:30 That's looking good. - Just the sound of this sounds fabulous.
04:39 Cherry Right Slice. - Yes! That's good.
04:45 Well, we've done the base. Very good.
04:50 Now we have to do the filling. We might as well put this away.
05:04 Okay. -It might be in the way. - Do you want me to put it
05:09 underneath? -It would be good. - Okay.
05:13 So we're good. Do you want to put this one in the...?
05:23 Yes, you can see that the nut really smell really nice
05:31 and smell good. -Um hum. Yes.
05:35 Okay, yes. The next one with the filling...
05:40 Normally we cook coconut with Raspberry. You can if you don't
05:50 want to separate the seeds and the pulps and you can
05:56 blend it together and cook it but it will have a
06:00 gritty texture. -Alright. - Yes, so you can either choose
06:05 one way or the other. - How do you get the seeds out?
06:10 - Just use strainer. So you all combine everything.
06:15 Put shredded coconut, vanilla, a little bit of salt,
06:20 and maple syrup or honey and you cook and chill to the
06:25 consistency of this so we just put it through. -Want this?
06:30 - That will be good. -Will we need to bake this recipe?
06:48 No, it's all frozen style, you can freeze it overnight...
06:54 I normally do it overnight because the topping that we're
06:59 going to do needs a little bit of setting, not so much about
07:04 this two layers. - One thing I like about frozen desserts is
07:11 you can make them ahead of time and just pull them out when you
07:15 have company or when you need... - Yeah, sometimes you have
07:17 unexpected visitor and you want to serve them something nice
07:21 and you realize that you haven't got anything nice if you don't
07:26 - That's right. Make it ahead of time. This way it will
07:30 give you something. - And it frees you up if you
07:34 to cooking other things for a meal. -That's true,
07:36 there, it's ready to go. I think it's a lot of our food
07:41 is plant-based side. It help a lot with this. - Yes.
07:49 It's easy to make, we don't have to go through too many
07:55 process. I guess you could if you want complicated but
07:59 in general case, you want simple. - Yes, I like that.
08:03 - Done! -Okay! One layer done. - Filling? -Yes!
08:08 The topping just have a cashew and maple syrup, carob powder,
08:16 a bit of salt, vanilla, coconut milk, about 100 ml. and
08:25 Guar gum, just to stabilize and thicken up a bit.
08:30 So cashew, vanilla, this time we have to be watch
08:37 I think we put the liquid first, that will help to blend it
08:42 better. -Thank you. -So they're really healthy
08:53 ingredients going in there aren't they?
08:55 - It is. -Cashews, the coconut Cream, carob powder has been
09:01 good benefits just as well. Hmm, a little pinch of salt.
09:09 Because of this one, we don't add water if possible but if we need
09:20 we could if it's a little bit just in case.
09:23 Because we want it to be not too much water content.
09:28 - Alright.
10:09 It doesn't go that great. I might need a little bit of
10:19 water to get it a bit... See what happens.
10:30 Normally it's supposed to be very smooth.
10:34 Like I did with the other one.
11:08 So because the side is splashing out that way it will
11:15 be a bit gritty texture so I'm just going to use the
11:20 middle part. I mean everything will come down but I won't
11:26 scoop the side there. -Um hum! To have a little bit. -Have a
11:32 bit smoother. -Yeah. -And that is a beautiful topping isn't it
11:36 that brown color and dark carob?
11:40 Yes! It is very hard to get everything out.
11:48 It is tricky to get it out of blenders isn't it?
11:50 It is tricky sometimes. Alright, it will be enough
11:55 for the top anyway.
11:57 I can see there are little bits of chunks of nut there so if we...
12:04 - You can have it chunky if you wish to or you can have it
12:10 as smooth as you want to as well.
12:12 I would like it a little bit smoother but plenty to be longer
12:19 but achin'...Yes! That looks... Now we put it in the freezer.
12:38 - Alright. Okay. -So this one you have already made
12:48 we could cut it up. There we are.
12:52 That is a little bit.
13:09 You can cut it if you want to present it neater you can cut
13:16 out a corner one. I have a plate here.
13:24 - Oh, okay, there it is, I couldn't find it.
13:36 So, I need a paper towel, a little bit to wad it up
13:42 because otherwise, it's going to...- It's not going to be neat.
13:47 You can do it but it's going to look neater this way.
13:50 - Very nice!
13:59 Yes! That is the Cherry Slice. Yes. That does look appetizing.
14:00 Yes! That is the Cherry Rock Slice. Yes. Wow!
14:07 That does look appetizing. - Thank you!
14:11 You're welcome.
14:13 - Well Jeweldia, now you've made some deserts
14:18 and what are you going to be making now?
14:20 - Today we're going to make savory.
14:23 Cauliflower Patties.
14:26 So I have cauliflower half a kilo and about 400 grams of
14:31 potato, bread crumb, parsley, onion, spring onion, salt,
14:40 garlic, nutritional yeast, vegetable seasoning,
14:47 and sticky rice flour, and coconut milk, sorry,
14:54 cashew cream. Thank you!
14:56 - And that was just a mixture of cashews and water...That's right.
14:59 Blended equal proportions. Yes.
15:01 Okay, so, the're all added to the bowl and blend this together...
15:18 You can do it very fine or you can do it a little bit
15:24 course. -Cause it depends on how you like it.
15:28 Yeah. So then. -So that was obviously pre-cooked potato.
15:37 Yes! Pre-cooked potato and cauliflower, that's correct.
15:40 Do you usually steam it? Is that the best way of doing it?
15:43 Yeah, I normally steam it, I use both ways.
15:46 So then, I will add all these seasonings, nutritional yeast,
15:56 parsley, onion, spring onion, a bit of salt depends on your
16:08 taste...This is a bigger dish so I better put a bit more
16:12 and garlic, sticky rice flour, and this.
16:22 I have to use my hands for this. Just add all the wet ingredients
16:30 quickly and nicely and then you add up this.
16:42 Lastly, bread crumbs, gluten-free.
16:45 - It looks like a good way of getting cauliflower down
16:56 the hatch. -Yes. - For those who may not like
16:59 cauliflower. Could you use other vegetables?
17:02 You can. You can use broccoli and other things,
17:05 other vegetables that you would like turnip or any other thing.
17:12 I'm just thinking that the potato might have a
17:16 binding effect. So this is funny, could you exchange that one?
17:21 - I guess you could, I haven't tried.
17:24 Okay! -Probably a good thought. Okay! You just make into a
17:30 bowl. You either can put a little bit of oil and bake
17:35 it or you can just bake it the way it is
17:39 and that would be perfectly fine.
17:41 So you just, I think we have made one earlier.
17:45 - So would you mind taking it from the oven?
17:47 - Okay. That's about this size.
17:56 - Well, these are looking good, - Wow. -That's nice.
18:11 Yes! Would you like to serve it?
18:13 Okay, let's see. Maybe I'll use what to pick it up
18:18 - Be careful, don't burn your hand. -No, we don't want any
18:30 burns. That's perfect. That looks good.
18:38 Yes, that is our patties. For today, cauliflower, potato
18:46 patties. -Yes! -Very good! So you would just bake these
18:51 in the oven for...Normally you use about 180 degrees for
18:56 20 or 30 minutes and just perfectly okay.
18:59 - Sounds good! Yeah!
19:00 And could you freeze them? - You can.
19:03 Alright. Yeah. -I have done it many times.
19:07 - Alright. Okay. Well, thank you Jeweldia.
19:10 - You are welcome.
19:13 - Jeweldia, what is the last dish that you are going to be
19:17 demonstrating today?
19:18 - Coconut Biscuits.
19:20 Coconut Cookies. - Okay, you like is a very simple dish.
19:25 You have shredded coconut, macadamia, Almond Milk,
19:31 honey, and a bit of salt.
19:33 Alright! -That's it. It's very easy. You can use other nuts
19:37 whichever way you like, I won't limit you to it.
19:42 So give it a try. Anything. - Alright. -Yes.
19:45 So, let's mix it. Coconut, shredded one, about two cups.
19:55 One cup of Macadamia, one cup of Almond milk, Maple sss...
20:13 I made a mistake you know. I should have put the salt first.
20:16 - Alright. -You want to get the mixture right.
20:19 - I'm glad you brought that to our attention.
20:23 to remind us to... - Especially when you go with the
20:27 the liquid sweetener like honey and maple syrup because
20:32 stuck together straight away. - Um hum, we don't want
20:35 a mouthful of salt. - That's right.
20:37 - So these are really nutrient dense. -That's which?
20:42 - It makes about 20 biscuits so if you want to
20:47 go through the way we have to eat nuts, you shouldn't eat
20:49 more than one. -Oh, one cook... One biscuit. -One biscuit...
20:56 - Yes! -Alright. -But I see sometimes it is hard for
21:01 depends on how our taste is. - Um hum. That's right.
21:04 I would probably like a little bit more. "Laughter."
21:13 And just mix very well. - It looks like a nice simple
21:21 recipe. -Yes. Very simple recipe.
21:23 - Coming up nicely. - I wonder if these could freeze?
21:32 - You can, I'm sure you can.
21:34 - That would be handy to freeze some and just have them available
21:39 at any time. - Yes.
21:46 - So, because of honey it's more stickier so the mixture is
21:54 a little challenge sometimes to make it a bit right.
21:58 But, somehow it is a simple recipe.
22:04 - So if it was maple syrup it would make it a little bit
22:10 easier to mix in.
22:11 - Yes!
22:13 - Because it is a bit thinner but it doesn't matter, it's all good.
22:23 - I know some honeys are runnier that others in the
22:26 colder weather tends to make them thicker as well.
22:30 - That's right.
22:31 So you just make a little bit of it because you don't have to
22:37 do it big because when you put it in the oven, it will go down
22:41 a bit because of the honey. - Okay. -Texture.
22:48 Yeah! Yes, so we just continue doing this way
22:56 and we have some made earlier in the oven, would you like to
22:57 see? -Sure. I'll get them out. That's good.
23:08 - And sometimes it doesn't hold the shape properly either.
23:15 But, the taste is very good.
23:31 - Yeah, so these ones flattened out a bit and you were saying
23:39 earlier, sometimes it can happen. -Yes.
23:42 - It can happen if you have the heat a little bit more
23:45 than because the heat is too big and so the...it just melted
23:53 very quickly, the honey just going down.
23:55 - Okay. -Flat. The good thing that you do is 130 for 20 or
23:56 many also. Just perfect. Would you like to serve it?
24:06 - Yes, I was just thinking what is the best way of getting
24:08 it out without it falling?
24:10 Cause I don't have a spatula here, maybe I'll try this.
24:13 - Do you want to use a spoon?
24:16 - I'm not sure what's best.
24:18 - Let's try. That looks like it is working nicely.
24:22 - That's good. I guess we could doctor it up a little bit too.
24:33 We wanted to make it... We could.
24:36 Artistic. -It's always nice to put color. -Um hum.
24:41 - Onto the plate. So these are some raspberries aren't they?
24:53 - Yes, from my garden. - Yeah.
24:55 Beautiful.
25:03 Kiwi fruit. - Yes!
25:05 - That looks good. - Maybe I'll leave it at that.
25:10 - And that perfect. - Alright.
25:12 - Another biscuit. Another sweet for the day.
25:18 - Now that looks lovely, I'm sure the people will enjoy
25:22 eating that.
25:27 - Jeweldia, would you mind just going over and saying
25:30 what you have demonstrated today?
25:32 - Yes. -Today we make Cherry Rock Slice and I like it very
25:40 much. My husband often says that it is a little bit thick
25:43 on the top. He would like it a little bit thinner but
25:46 to me, I think it is okay.
25:47 And the second dish we made Cauliflower Patties and it's
25:53 it's very nice for all occasions as far.
25:56 And the last one easy recipe, Coconut Biscuit or cookies.
26:01 And it's simple ingredients, simple to do.
26:05 - Yes! Jeweldia, I'd like to thank you for your time
26:10 and effort that you've put into coming in and preparing
26:14 these recipes and sharing them with the viewers.
26:18 And just love it that you are interested in health and being
26:23 healthy is wealth. Thank you very much.
26:24 You are very welcome.
26:25 Today's recipes can be found at 3abnaustralia.org.au.
26:33 The Bible verse I'd like to leave you with is
26:37 from I Corinthians 10:31. Whether therefore you eat
26:42 or drink or whatsoever you do, do all to the glory of God.
26:47 God is good to us, let us glorify Him by making Healthy Choices.
26:54 Jeweldia, thank you very much. And for you out there watching
27:00 Thank you for joining us here on Healthy Living Cooking.
27:03 May God bless you until we meet again.
27:05 Happy cooking.
