00:02 If you're just joining us,
00:04 today's program is about nutrition
00:05 when it comes to cardiovascular health.
00:07 And, Dr. Marcum, before the break
00:09 I told everyone that we were going to talk
00:10 about your favorite heart health promoting dish,
00:13 so what is it?
00:15 Well, you know, I'm pretty healthy nowadays
00:17 about eating especially since I had my blood sugar
00:20 scare about a year ago.
00:22 So in the mornings for instance, you know,
00:23 this isn't not my favorite, but I like oatmeal
00:25 and I put some flax on it I put, you know,
00:28 flax helps lower the blood pressure,
00:29 fiber helps things out.
00:31 I like to put some berries which are antioxidants.
00:34 Remember, antioxidants slow down DNA damage.
00:38 So all the fruits
00:40 and vegetables have antioxidants,
00:41 in fact here's one of my favorite antioxidants,
00:43 is have a little fruit tea,
00:45 you know, to have some raspberry
00:47 four or five calories in the water
00:48 so I can hydrate myself.
00:50 Bathe my floor with antioxidants
00:53 and I can sip a little bit of that all day long,
00:55 you know, how nice is that?
00:57 And on a cold day it's your and I stays up warm.
01:00 Yeah, so, but at lunch the nitrate rich greens
01:05 that I have is arugula,
01:07 not everyone likes the taste of arugula
01:09 just like not everyone likes cilantro.
01:11 You like cilantro? Yeah, yeah.
01:13 Yeah, some people eat cilantro and it tastes like soap
01:15 but I've heard that with arugula,
01:17 some people have a genetic distaste for arugula.
01:20 But arugula has some of the highest nitrates
01:23 rich content that's out there.
01:25 All right, now what do nitrates do for us?
01:26 Well, nitrates in the plant, it does nothing,
01:29 you know, beets have nitrates,
01:31 beans have nitrates, greens have nitrates,
01:33 but when you eat it, okay,
01:35 it's transformed into a chemical
01:37 called nitric oxide
01:38 which makes the arteries bigger.
01:40 When the arteries get bigger, it brings down blood pressure,
01:43 it also has other mechanisms that seems to make it safe
01:47 and also you get all,
01:48 you know, within that you also get antioxidants too.
01:51 So I like to put lots of vegetables and arugula
01:54 and I eat a big salad every day
01:56 and you sort of been over
01:57 and you've seen some of the big salads I make.
01:59 I just make some big salads.
02:00 What I like about salads is this, I like to feel full,
02:04 okay, you know, I can eat a pound
02:06 or two or three pounds of salad and it's very little calories.
02:10 Yeah, it's still very healthy even it's in large quantity.
02:12 A pound of vegetables is about 100 calories,
02:15 you know, I could eat five pounds if I wanted to,
02:16 500 calories that's not very much
02:18 and yet you get all of the good things
02:20 that help cardiovascular health
02:22 so I would say arugula and constantly bathing my body
02:25 with antioxidants,
02:27 just focusing on healthy things
02:28 and also when you focus on positive things
02:31 and you develop those taste,
02:33 I love spicy things, you know, I, you know,
02:36 if my salads not tasting good, I might try a vinaigrette,
02:39 I might put a little hot sauce in it to bring it to life.
02:42 I even put hot sauce on my potatoes
02:44 and I've all different types of hot sauce that I like.
02:47 Now, the problem is, once you become
02:50 a hot sauce junkie,
02:51 okay, you go around
02:52 and look for different types of hot sauces
02:55 and so I tried to get different types
02:57 and, you know, I love to eat Thai hot,
02:59 you know, different types of hot,
03:00 but that's what brings food to life
03:02 and I try not to use a lot of it
03:03 because if you lose, you want to get potent rather,
03:05 because some of them have a lot of salt in it.
03:07 Yeah. Right.
03:08 So those are some things that I do to help bathe my body
03:13 in healthy things and also,
03:15 it keeps me from eating the bad things.
03:17 Yeah, right.
03:18 You know, once I fill up with good things,
03:19 I'm less likely to get that.
03:21 And once you start eating this way,
03:22 and realizing that nutrition is very valuable,
03:26 it just helps a whole lot.
03:27 In fact, I take care of a lot of people, Nick,
03:31 we talk about cardiovascular disease,
03:33 like some have arteries that are little,
03:35 okay, in the heart.
03:37 Remember, we have lots of arteries
03:38 through all of our bodies,
03:39 and whenever we eat too much of the bad stuff,
03:41 you store fat in the arteries,
03:43 so fat and sodium
03:45 are the cardiovascular system's enemy.
03:47 That's the cause of a lot of disease with genetics
03:50 and it starts when we're young,
03:51 you know, I have people that start this disease
03:53 in their teenage years, you know.
03:56 I've seen type 2 diabetics in kids
03:58 as young as eight or nine years
04:00 because they're eating fat, they're not exercising.
04:02 So anyway, when they come in, I explain the physiology,
04:06 I said, Listen, you've already been to the surgeon,
04:07 your arteries are too small to bypass,
04:09 we can't put in stents, usually these are diabetics.
04:12 And you already can't walk because you heard
04:14 that's called angina,
04:16 I go well, we have some some food type treatments
04:19 for angina that I like to give a try.
04:22 So rather than to have that discussion,
04:24 I made a short spot on that not too long ago
04:27 and people can use these spots, right?
04:29 Yeah, absolutely.

05:06 One of my patients came in the other day
05:07 having more angina,
05:09 that's pain when you walk and do things.
05:11 He was already on medications and it had some procedures,
05:14 I suggested
05:15 a Biblical Prescription for Life,
05:17 Genesis 1:29,
05:20 this text talks about how we get back
05:22 to God's plan of eating, eating more fruits and grains
05:26 and seeds that our body does better.
05:28 Numerous studies have shown that
05:30 when we eat this way our body makes substances
05:32 that make our arteries bigger.
05:34 When he started to eat this way,
05:36 his arteries got bigger,
05:38 he had less chest pain, and he had less symptoms.
05:40 So he did this almost every day he ate his greens.
05:44 Think about it, a Biblical Prescription

05:54 Biblical Prescriptions for Life.
05:58 You know, Dr. Marcum, one way that I've benefited
06:01 is I like to ride my bike a lot.
06:02 Yep.
06:04 And you've told me that the nitric oxide
06:05 from greens and beets is a good thing.
06:08 And it actually helps lower,
06:10 when I'm doing a really high intensity workout
06:12 it helps lower the amount of pain
06:14 or difficulty that I feel.
06:16 It feels easier than it should
06:18 and it's just 'cause I'm helping myself
06:20 with some greens.
06:21 Yeah, and people with real bad angina,
06:23 I've had some people
06:24 that can't walk across the street
06:26 because they have angina's pain
06:27 when they do things, in the jaw.
06:29 It really limits their lifestyle,
06:31 all not a lot of medicines,
06:33 and they start and I prescribe them
06:35 not so much greens in their salads but I say,
06:38 well, eat some greens every three or four hours.
06:41 They'll have a bag and they'll chew the greens up
06:43 every three or four hours and when you all of a sudden
06:45 see them that they used to not be able
06:47 to walk 100 yards without symptoms,
06:49 now they can go quite a long period of time.
06:52 It just really reinforcing and then realize,
06:54 you know, God has given us things in His world
06:58 that can help treat disease.
06:59 But why not prevent it a little bit?
07:01 That's what I like to do.
07:03 Now, we haven't always had this issue
07:04 of having too much fat and too much salt in our diet.
07:08 When did this happen? How we got into this place?
07:11 Well you know,
07:12 the only thing that's one of the constants
07:14 in life is change,
07:16 you know, and we talked about
07:17 how cardiovascular disease has changed,
07:19 our understanding of nutrition has changed too.
07:22 Mostly we didn't even think about it for many years
07:24 but if you think back to a time around
07:26 the Industrial Revolution,
07:28 when technology got to the place
07:30 where we could have refrigeration,
07:32 we could store foods, life got easy,
07:35 you know, and then all of a sudden people started
07:36 having refrigerators, okay,
07:39 then we became a society where we were rich,
07:43 you know, when we ate the king's foods.
07:45 You know, the king's foods were the meats
07:47 and the heavy stuff,
07:48 you know, we quit eating out of the garden
07:50 as much as we started moving into cities,
07:52 things got more convenient.
07:54 We quit eating
07:55 all the fresh fruits and vegetables.
07:57 In fact, it's been estimated now, Nick,
07:59 that as many as 95% of people
08:01 don't get enough fiber every day.
08:04 Why is fiber so important?
08:06 Well, not only it helps cardiovascular help,
08:08 but it improves the bowel,
08:10 you know, the good and bad bacteria,
08:12 when you have lots of fiber in it,
08:14 your good bacteria make a chemical called butyrate
08:17 that feeds them so they grow
08:19 and they turn off some of the bad bacteria
08:21 which cause inflammation, disease, damages,
08:24 irritable bowel, helps us.
08:26 There's a chemical that's made called
08:27 trimethyl amine oxidase,
08:30 which is an atherogenic material,
08:32 which means it clogs up arteries,
08:33 that's not good.
08:35 And we get that when we have
08:36 a lot of the animal type flow in us.
08:38 Things like carnitine, you know, and things like that,
08:41 that comes from the fat, the foods we eat the eggs,
08:43 the meats, that feeds the bad bacteria.
08:46 So just understanding this,
08:48 we've learned this with nutrition
08:49 through the years.
08:51 So for years, we didn't know all this,
08:52 so people kept eating this bad food
08:54 and then all of a sudden guess what,
08:55 we had fast food comes on the scene.
08:57 Right, yeah, that didn't help.
08:58 No, I mean, and then, you know, bless their hearts,
09:01 all these fast food places came up over,
09:03 and then that our society kept going faster.
09:06 I've had some patients that come to me and I said,
09:08 well, let's talk about some nutritional therapy
09:11 and they look a little funny,
09:12 what is that I never heard of that.
09:14 I say, "Well, tell me where you eat?"
09:15 Well, they eat Hardees for breakfast,
09:18 you know, they get a biscuit.
09:19 They might go to McDonald's for lunch
09:21 and then in the evening they don't eat,
09:24 they go out and they have something else
09:25 so people are not eating at home.
09:27 And first there I say, I let them think about it,
09:29 I said, "Man, you're taking too much fat and sodium,
09:32 which is damaging your cardiovascular system."
09:35 So I said, "Well, let's try to eat one healthy meal a day
09:38 and we start somewhere and we build up."
09:39 Well, this is what's happened through years and years.
09:42 Well, through years, modern medicine
09:43 hasn't understood how important nutrition was
09:46 just like cigarettes, we didn't really understand
09:48 how important cigarettes were and for years, you would say,
09:51 you know, sees doctor smoking cigarettes
09:53 and it was bad.
09:55 It takes time,
09:56 sometimes it takes time to see things
09:58 over a course of generations.
10:00 Well, I see that in nutrition, it's taking some time
10:03 but now we have the evidence based studies
10:05 and me personally,
10:07 I got to meet Colin Campbell, read the book,
10:09 "The China Study"
10:10 then this nutritional craze started going wild now,
10:14 as nutrition got out there, and the internet,
10:16 we're seeing people, healthy meals
10:17 at restaurants now,
10:19 we're seeing people start shopping
10:20 at the produce section.
10:22 We're seeing healthy meals that they can,
10:24 you know, healthier meals that they can even freeze
10:26 and do what they want to.
10:28 So it sort of evolved over time,
10:29 this nutritional movement,
10:31 but I see this is a very powerful thing,
10:33 a very powerful lifestyle that gets back to way
10:35 God designed this at the very beginning.
10:37 Yeah.
10:38 Remember Daniel and his friends,
10:39 remembered the creation,
10:41 they didn't have all this processed foods.
10:42 God wants us to head this direction
10:44 and He wants to give us the power
10:46 to see the importance of these changes.
10:47 Yeah, I guess it can be said that
10:49 with great technology comes great responsibility,
10:52 just as refrigerators and microwave
10:53 and all these kind of things,
10:55 you know, it's great to use them
10:56 but let's do it in a way that we're still eating healthy
10:59 whole foods and not just a bunch of,
11:01 you know, stuff that's a bunch of salt and fat in it.
11:03 Yep. All right.

11:42 Many patients I have come to the office don't realize
11:45 that their nutrition and their physiology
11:48 and their diseases are interrelated.
11:50 So I hope that, that point is well made today.
11:52 And you can use your food to treat cardiovascular health
11:55 and also prevent cardiovascular health problems.
11:59 But we do this from the power we get from the great physician
12:02 who leads us.
