00:34 for the most fabulous food of the season.
00:38 It's Evita Tezeno at A Taste of Paradise.
00:41 Welcome to our kitchen.
00:44 Yes, we're doing a wonderful scrumptious
00:48 Strawberry Ganache cake today, yes.
00:52 Oh, it's wonderful, fabulous
00:55 and scrumptious
00:58 and I can't wait to share it with you.
01:00 So let's just go to the recipe.
01:04 For the cake you need:
01:40 So we're going to start with the cake.
01:43 Very, very simple quick and easy.
01:46 We have our walnuts here
01:48 and we put them in the food processor.
01:53 We have our carob powder.
01:55 Carob is a fabulous substitute for chocolate.
02:00 It is high in calcium and it's naturally sweet.
02:04 So you don't have to have all of that extra sugar.
02:07 So we're going to put our carob powder in,
02:11 little bit of sea salt,
02:14 and we're going to blend that together first.
02:27 And that carob powder has the kitchen smoking,
02:29 look at that.
02:35 Cool, then we're going to put our dates in.
02:39 And so we want to kind of separate our dates,
02:41 so they're evenly distribute throughout our food processor.
02:47 And make sure that they're pitted
02:49 and there is no pits in them.
03:07 So it's all evenly incorporated,
03:10 so we want to then place it in our bowl.
03:20 We want to take our springform pan,
03:22 and we want to take half of this mixture
03:25 and put it in our springform pan,
03:32 about half of it.
03:33 And we want to start pressing it down.
03:42 Press it down, press it down.
03:45 So we're going to put a little bit more.
03:53 This is a really nice dense cake
03:56 but it's delicious,
03:58 delicious.
04:00 Then we take our strawberries and we just sprinkle it in.
04:09 Evenly distributed throughout the cake,
04:12 then take the rest of the cake mixture
04:15 and put it on top.
04:27 And press it down.
04:41 And then we're going to put this in the freezer
04:44 really quick for it to sit.
05:09 Now we're going to go to our icing or our frosting.
05:17 Using our blender,
05:22 we're going to put our maple syrup in,
05:31 our carob powder,
05:39 our medjool dates that have been soaked,
05:46 and our avocado.
06:26 Look at this, yummy, it's so creamy.
06:35 Then we want to place that in a bowl.
06:42 This is a real quick easy dessert
06:46 and it doesn't take a lot of preparation.
06:51 You want to get all of that wonderful carob goodness
06:54 out of the blender, okay.
06:58 And now let's go get our cake.
07:07 So it's been setting for a minute.
07:21 And it will set longer.
07:29 It needs to set about an hour in the refrigerator
07:32 or in the freezer.
07:35 Then you take your icing,
07:39 and you spread it all over the top.
07:53 And you want to make sure that,
07:55 you have it spread nicely all over the cake.
08:09 And then you take your wonderful strawberries.
08:19 Fan them out and place them all around the cake.
08:52 How amazing is this.
08:54 Got a little crumbles on it but it's okay,
08:58 your guests will love it.
09:00 It's been another great recipe the great show,
09:04 table this holiday season,
09:06 and remember to live life fresh.
09:16 Holidays come and go,
09:17 and it's one thing that doesn't come and go
09:19 whether it's Christmas, Thanksgiving,
09:22 the holidays, Easter,
09:23 there's one thing that's a main stay in most dishes.
09:26 And we all know it's that dessert,
09:28 but a part of that dessert that's even better
09:30 it's called the banana bread.
09:33 Some of us will eat a slice or two,
09:34 will even wrap some up in paper towel
09:36 and bring it home,
09:38 because we love the banana bread.
09:40 And a reason I believe that we love the banana bread,
09:42 not only 'cause bananas are good for you,
09:43 and all of that stuff,
09:44 because sometimes it's not too sweet,
09:46 it's not you know, too bland,
09:47 it's just right, it satisfies.
09:50 And so what sense would it make for us,
09:53 this program of Taste of Paradise
09:55 to do anything else but banana bread?
09:58 Yes, our favorite banana bread,
10:00 but sometimes we make banana bread
10:02 when we have no choice and you know,
10:04 we always ask people,
10:05 "What bananas do you use?"
10:06 They said, "Well, when a bananas are going bad,
10:09 we always use the what?
10:11 We always make the banana bread."
10:13 Well, I want to encourage out
10:15 that's probably not always the best idea.
10:17 Why?
10:18 Because if you notice,
10:19 sometimes when you get that thing
10:21 looking like a cheetah,
10:23 or sometimes they're looking like a zebra,
10:25 something like that,
10:26 that's a sign that is probably not the best thing to eat.
10:29 Matter fact, when we do programs
10:32 for even diabetics,
10:34 they always say, they told us, we can't eat fruits.
10:37 Actually, do you know
10:38 this is considered to be a serious error?
10:41 Diabetics need fruits,
10:44 however they must use some caution in certain fruits.
10:47 One of those fruits in particular are dry fruits.
10:51 Another one is any items that have been like sweet
10:54 and you know, what I mean,
10:56 we talked about the dry fruits
10:57 or even like raisins or stuff like that,
10:59 and a lot of the dry fruits that you buy at the store,
11:02 a lot of them contain sugar.
11:03 So yes, that will elevate the blood sugars.
11:05 But there is a couple of fruits in particular
11:08 that is very good for diabetic.
11:11 Y'all ready for this?
11:13 Don't get me in trouble with your doctors, here it is,
11:14 that fruit is bananas.
11:18 Yes, I said it bananas.
11:20 Not this ugly looking banana.
11:22 I'm talking about bananas
11:23 as soon as they goes from green to yellow,
11:27 bam, a diabetic needs to eat that.
11:29 It is actually good
11:31 because it has a good amount of carbohydrates
11:33 and it helps balances those sugars out.
11:35 But don't go knockout three or four of them,
11:37 you see a lot of times when we wait for that banana,
11:40 if you can take a little close look here to get this way,
11:43 it's starting to show that it is fermenting.
11:46 A lot of us don't use bananas until it's like smelling.
11:50 Matter fact you know it's fermenting,
11:52 because it starts to smell like what?
11:54 It starts to smell like alcohol.
11:56 You know what I am talking about.
11:58 That time that means you're not supposed to eat it.
12:00 It's higher in sugar content,
12:03 that one you don't throw it away either,
12:05 we're in a recession,
12:06 you don't want to be wasting food,
12:07 everything you got to save.
12:09 You take that and you put that in a compost
12:11 and you can use that for a garden,
12:12 so bless the garden with this.
12:14 But a diabetic should eat it
12:15 as soon as it goes from green to yellow, eat it.
12:18 Do you know another fruit that's good for diabetics?
12:20 One of my favorites is mangoes.
12:23 Yes, I said it mangoes.
12:25 Mangoes are fantastic for diabetics,
12:28 however rule of thumb,
12:30 don't wait till the corner of the kitchen it start to,
12:34 and it smell like Jamaica,
12:36 that means it is too old
12:38 or it's too fermenting, you know,
12:39 where it's all squishy and you just take that thing,
12:41 you rip it open, it's all over your face,
12:43 and you just knockout two, three,
12:45 four of them, too much,
12:47 too much sugar.
12:48 This is what will cause the problem.
12:49 So people say how can a diabetic eat a mango?
12:52 As soon as it goes from green to tender, bam,
12:56 at that moment that's when a diabetic could eat it.
12:59 So yes, bananas and mangoes are good,
13:03 but please be careful,
13:05 don't let it ripe too much.
13:06 And that's the time that a lot of us make banana bread
13:09 when it ripes, ripes, ripes.
13:11 And that time you should probably
13:13 either put it in a garden or leave it alone,
13:15 even a fruit flies will get into it before you
13:18 and we're kicking them away,
13:19 move away from my bananas,
13:21 here is the type of banana bread.
13:22 So it's not only during holidays
13:23 that we make banana bread,
13:25 but we make it all the time, so you can enjoy it.
13:27 Banana is also good along with apples,
13:30 if a person is not feeling too well
13:32 in the stomach you know, what I mean.
13:33 And, you know,
13:35 they're going to the restroom a little too much,
13:36 they have number two.
13:37 It helps fight against you know,
13:39 the watery stuff.
13:41 Amen, too much information, let's keep it moving.
13:42 But it's also good to fight against constipation as well.
13:46 It helps balance out the acid in the stomach.
13:49 So bananas are fantastic.
13:51 There is a reason why
13:52 this thing is all over the world,
13:54 it is like God wanted to bless everybody with this stuff.
13:57 You can even find them in the States to South America,
13:59 to Africa, to Asia,
14:01 it's there so bananas enjoy them.
14:04 And now we're going to look at
14:05 how we can prepare this simple,
14:07 healthy banana cake for the holidays.
14:11 Here it is, we call it the blessed,
14:14 y'all ready for this
14:15 because this thing is so awesome.
14:17 The Blessed Banana Bread,
14:19 BBB and this is not for Better Business Bureau.
14:22 All you need is:
14:42 Sometimes people use aluminum free baking powder
14:45 or something of that nature but the featherweight,
14:47 we find this pretty good.
14:58 Literally that simple, that easy, the BBB.
15:03 This is going to help you to run a better business
15:05 because it's also good for the mind,
15:07 did you know that?
15:08 Bananas are also good for the mind.
15:10 So all we're going to do is
15:11 we're going to basically start mashing these up.
15:13 I notice there are so many different ways
15:15 to open these things,
15:17 but I'm just going to go the way
15:19 that I have been taught.
15:21 You go ahead and you open that up
15:23 and you put that in there and you can smell it.
15:25 Once those banana start smelling a little questionable,
15:28 you got to leave those alone.
15:29 But look at this, this is still good,
15:31 it's fresh, ready to go.
15:33 You don't want to per se
15:34 however use those bananas when they're too hard
15:37 or too green
15:39 because then in that case
15:43 it's no going to workout as well,
15:44 it won't have that nice rich flavor
15:47 that you will get from the bananas.
15:49 I got three and then this one,
15:51 I'm going to use this last bit here and four.
15:56 So basically you got to just break those up,
15:58 y'all should be able to do this.
16:00 Do this with the kids please, get the kids involve.
16:03 Everybody is like,
16:05 the kids don't want to eat this,
16:06 that's because they're not involved in making it.
16:08 Matter of fact,
16:10 it says that children by the age of eight,
16:14 nine should be able to handle the affairs of the kitchen.
16:18 Did y'all hear that?
16:19 I think my mom took that serious.
16:21 I think she had us just to cook and clean literally.
16:25 After we were able to start cooking and cleaning,
16:28 my mom never stepped back in the kitchen,
16:30 and we even,
16:31 I've been complaining with my brothers, I'm like,
16:32 it's the only reason why she had us
16:34 to cook and clean for her.
16:35 She was smart,
16:37 it was the best thing that she did for us.
16:38 I didn't like it then, but now I'm blessed by it,
16:41 that's why it's the blessed banana bread.
16:43 So basically we got to mix those up.
16:46 And then if you can take a quick look.
16:49 This actually worked pretty well.
16:50 This is some little unique,
16:53 crusher, musher or something like that,
16:55 maybe if you can get one of these,
16:56 it will be cool.
16:57 If you don't have one of these, no problem.
16:59 A fork will do the trick. All right.
17:01 Let's go old school, but if you can find these
17:04 in one of those little stores, it will do just fine,
17:07 so we have the bananas there,
17:09 and then I'm gonna put this on a side.
17:10 Then we're going to add
17:12 the rest of the ingredients, okay.
17:14 So we have the flour.
17:17 All right, so we add our whole wheat flour,
17:19 some people use pastry flour, work with what you have.
17:23 Big thing with making recipes is people always stop
17:25 because they're missing a certain ingredient.
17:27 Work with what you have
17:29 but ideally work with that whole wheat flour,
17:31 so we're going to mix that up.
17:32 We're going to add those cane juice crystals.
17:34 Now if a person is dealing with diabetes
17:37 or something of that nature,
17:39 you can actually hold of on the sugar
17:43 or a cane juice crystals there,
17:45 and you can use either agave nectar,
17:47 some people use agave nectar,
17:49 or you can just add a little bit more of bananas,
17:54 and bananas will do the trick.
17:55 That's one of the ways I like to do it,
17:57 if you get those nice sweet, sweet bananas
17:59 that will do it just as well.
18:01 Then we're going to add the rest of the ingredients.
18:05 So we have the fatherweight there.
18:06 This is a item that we use instead of baking powder,
18:13 or even instead of the aluminum free ones as well,
18:16 because they still have the sodium bicarbonate.
18:19 All right.
18:21 And then we have the rest of the items here,
18:24 so I'm basically gonna put it in cardamom, coriander.
18:27 Anybody remember what we use this for?
18:29 In place of cinnamon and nutmeg,
18:31 we'll use cardamom or coriander.
18:33 If you didn't get it by now with these many seasons,
18:36 I don't know what to say anymore.
18:38 But you add the cardamom and coriander,
18:40 this gives it that nice flavor,
18:42 that's why banana bread tastes so good sometimes
18:44 because of cinnamon and nutmeg that we add.
18:47 So you mix these items up.
18:50 All right, and now it will get nice and thick.
18:53 You got to work those bananas, if you can't you can even,
18:57 you can use your hands as well.
19:01 It becomes nice and thick.
19:06 So who knew that you eat banana bread a nice dessert
19:10 and you're helping the brains,
19:11 you're helping the digestive tract,
19:13 I mean this thing is good for almost everything.
19:17 Even the monkeys know
19:19 what's good for them, not saying,
19:21 however that we're monkey here, so...
19:27 Even now one person says, some people act like it,
19:30 so we mix that up nicely.
19:34 This thing will have you breaking out in a sweat here
19:37 if you don't watch out, so we'll get that going.
19:41 All right.
19:43 And watch this, I have some more bananas,
19:45 you can add more bananas, you can add different fruits
19:48 and so what I'm going to add is the raisins, all right.
19:51 So we have the raisins here.
19:52 Now you remember I said, diabetics need to watch out
19:54 a little bit with the dry fruits.
19:56 Those raisins used to be basically grapes,
19:59 right or wrong?
20:01 So what happens is if a diabetic goes ahead
20:03 and eats a handful of raisins,
20:06 that means that they're basically eating
20:09 almost two bushels of grapes.
20:12 What would that do to your blood Sugar?
20:14 Anybody's blood sugar will go up through the roof,
20:16 even if you're not a diabetic.
20:17 So with the raisins,
20:19 diabetics need to be very, very, very,
20:21 very careful.
20:22 But they're still good,
20:23 prunes as well is good for individual.
20:27 So these are some of those,
20:29 I went ahead and put in some of our
20:32 either pecans or walnuts,
20:34 if you to take it to the next level,
20:36 somebody got,
20:37 I'll stay ahead or something like that,
20:39 throw in some pumpkin seeds.
20:40 You may end up with like a seed bread
20:44 or something like that.
20:45 But work with it,
20:47 the whole goal here is just to try and explore new recipes
20:51 and or take some old favorites
20:55 and make them even better.
20:56 So we have all of those there, mixing that up nicely.

21:02 You can even...
21:04 Hallelujah.
21:06 So this is good.
21:07 Then I'm going to get this ready,
21:09 I'm going to let this sit for just a little bit,
21:11 and I'm going to get my nice little baking dish here,
21:15 okay.
21:17 And I'm going to put just a little bit of oil,
21:18 so let me go ahead and grab this oil.
21:21 Just a little bit to line the edges here.
21:27 Okay, just put it on the sides there.
21:30 Now, if you all remember, I'm not a big fan of oil,
21:33 I don't like to touch oil.
21:37 I think, I know where I got it from,
21:38 I don't know if I should tell you,
21:40 but I tell you anyway.
21:41 You know, I tell everything.
21:43 Longtime ago when I used to be young,
21:45 before you all were around.
21:47 My hair used to be a little bit longer, yeah,
21:50 you know growing up, I was a last child.
21:52 And my mom always used to sit me down and grease,
21:57 see what I'm doing here.
21:59 She used to grease my scalp,
22:01 and she used to part it and braid it
22:03 and do all of these stuff.
22:05 And one day I just got mad,
22:06 I'm like, "Mom, if you want another girl, just have one."
22:10 You know, what I mean,
22:11 you don't have to be greasing my scalp
22:13 and she didn't put those just a regular grease.
22:15 You know, what I'm talking about,
22:17 the old school inner city grease,
22:19 that green thick stuff
22:21 and when she slapped it on my scalp
22:23 and it was hot outside in New York,
22:25 and you start sweating
22:26 what will happen to that grease?
22:28 The grease will start to melt
22:29 and it'll be all over your face.
22:31 I was about to say,
22:32 you're looking like not Michael Jackson
22:34 amen, all right amen.
22:35 You get what I'm saying though.
22:37 And I used to hate that oil and that grease.
22:39 And ever since then I grew up with this weird
22:43 I don't like grease at all.
22:45 You all know what I'm talking about,
22:46 the heavy, heavy, heavy grease.
22:48 Now you see why I wear hair short
22:50 because I don't like all of that stuff.
22:52 And she used to do that almost everyday.
22:55 Me and grease, we're not fans,
22:57 and that's why I don't like to use a lot of oil.
22:59 Anyway long story short,
23:01 you have to grease the pot there.
23:03 So here is what we're going to do.
23:05 We're going to take this nice little mixture,
23:07 I'll make it sure I get all of it.
23:09 We're going to pour that into our,
23:12 pour that into our nice little baking dish.
23:16 And this will do it itself,
23:17 all you have to do is put this in the oven
23:22 at about 350,
23:25 for about 50, 60 minutes
23:27 and it just depends, keep a eye on it.
23:28 There is no reason
23:30 why we should be buying banana bread.
23:33 Literally there is no reason why.
23:35 This thing is so easy,
23:36 you can make it with what you have.
23:38 You just have a little bit of flour
23:39 and some bananas, some raisins,
23:43 you can make it so there is no reason why.
23:45 I don't want to see anybody ever buying banana bread.
23:47 And if I do catch you buying a banana bread,
23:50 I'm going to make sure you watch this video.
23:52 And matter of fact we're launching a program
23:55 for everybody in their homes, in their church,

24:36 and zucchini cake and all of that stuff.
24:38 And as soon as we do the demonstration,
24:41 as soon as it's over,
24:42 all you have to do is bring the food out.
24:44 You may not know
24:45 all the beneficial properties of the food,
24:47 right, but you can still cook.
24:49 Everybody know somebody that can cook
24:51 and follow our recipe.
24:53 So we'll send you the recipes,
24:54 we'll give you the video I mean,
24:56 it's just a small fee or whatever like that,
24:57 and now you can run

25:02 I'll tell you little bit more about it,
25:04 I got to get this baking.
25:05 I already have one already,
25:07 so I'm going to carry this over here real quick,
25:10 get this rolling.
25:11 I have this one preheated, I'm going to set about 350,
25:14 and then I have another one in here
25:18 that is pretty much ready,
25:20 I just had it like staying warm for us.
25:23 And wow, there she is.
25:27 Look at this,
25:29 let's make a grand entrance here,
25:30 let's make a grand entrance, clear the way,
25:32 where is the red carpet?
25:33 I don't have a red carpet here.
25:35 But anyway, basically
25:37 I'm making a mess.
25:39 I don't have a red carpet but I have a wood carpet,
25:40 I have a wood carpet, here it is so.
25:42 There is your blessed banana bread.
25:47 Really simple and easy, it literally rises up,
25:50 it opens up and says, here I am, eat me.
25:53 And as you see here, it looks nice,
25:57 it's brown around the edges or whatever like that,
25:59 this thing is so easy,
26:00 you don't even have to be taking the knives
26:02 and going ahead
26:03 and testing to see in if it's moist
26:05 or whatever like that,
26:06 just in matter of time this thing is ready for you.
26:09 Now this one, it literally pops out.
26:12 I'm going to pop it out real quick,
26:14 and then I'm going to just cut a nice little slice off,
26:17 because I don't know if you all want to try,
26:18 but I'm thinking I want to try that,
26:20 so here it is and watch,
26:21 it's so easy that it literally pops out at you.
26:24 But it's warm, it's little warm.
26:27 And then shake it out and voila.
26:31 Holiday times is here.
26:33 You make about five of these,
26:35 seven of these, do something
26:37 and just wrap them up with a little love there.
26:40 Send a note, and look at that,
26:42 that one is ready to go to oven,
26:43 it's telling me we're about to get roll in too,
26:45 don't leave without us.
26:47 And you can cut this, let me see if I can go ahead,
26:50 and cut that nicely there, cut this.
26:53 Pass it out to your neighbors, your friends.
26:56 This is a heavy hitter though, be careful with this one.
26:59 This one is, this is heavy
27:01 and you only need a little piece for dessert.
27:05 And nice and thick as you see there.
27:08 Man, I'm going to keep cutting this thing,
27:09 I'm gonna share a couple with you all.
27:11 And when you passes out to your neighbors,
27:13 you don't have to be like, oh, you know,
27:15 come and meet in my church, just be nice to be nice,
27:18 and people will definitely,
27:20 they'll come by and then you can start that
27:22 Taste of Paradise Cooking Club.
27:24 Look how rich, oh, man, this is good stuff.
27:28 Have them come out, you teach them how to cook.
27:30 And matter fact,
27:32 if you don't know everything about it that's fine.
27:33 Just play the video,
27:35 let them watch it and have the food ready.
27:38 Do not show these programs without the food ready,
27:41 there will be a riot in your home,
27:43 or in your church,
27:45 so go ahead have the food ready,
27:46 pass it on and you ready for this?
