00:03 we are having such a great time in the kitchen.
00:05 We have Tony and Lachlan and Lily from Illinois,
00:09 and what is on the menu today, guys?
00:11 We have vegetable wraps
00:13 with crispy tempeh and classic hummus.
00:16 And for the dessert,
00:18 we have avocado chocolate mousse.
00:21 And so far, it's looking really good.
00:24 Excellent.
00:25 Chocolate mousse, it's chocolate mousse
00:26 but very close.
00:28 A lot of restaurants, they have chocolate mousse,
00:30 and they actually call it chocolate mouse.
00:33 He is the mustache guy, he has a chocolate mustache.
00:36 Excellent.
00:38 Make sure you wash your hands after you touch your mouth.
00:39 It's great.
00:41 So look at that, it's ready to go.
00:42 We'll give a little bit of a shuffle
00:44 and we'll keep that warm in the pan.
00:45 So we got all the vegetables done.
00:47 There is nothing else left, so that's great.
00:49 So we got two things to make now.
00:50 You want to get those in the rubbish,
00:52 that would be great.
00:53 So we're going to make
00:55 the chocolate mousse or the mousse.
00:57 So what we're going to do...
00:59 And this is really easy. We are gonna use avocado.
01:01 Now you're probably thinking,
01:03 what is avocado doing in a sweet dish?
01:06 There is no way I'm going to eat that.
01:07 But trust me, this is really delicious.
01:09 Avocado has got a really lovely creamy texture.
01:12 So, Lily, if you could kind of extract
01:14 the avocado from this,
01:16 and I will get the hard bit underway.
01:18 So just take the skin off and put the avocado
01:22 in the blender here.
01:23 Okay.
01:25 Just peel it? Just peel it off. Yep.
01:27 Oops, I've did it twice here.
01:29 And if, Tony, you can do the other one,
01:30 that would be great.
01:32 Just get rid of the skin, the stone.
01:34 So should I just put it in? Just put it straight in.
01:37 So we are going to add lots of lovely ingredients
01:39 to make this.
01:40 So we're going to add some carob powder.
01:42 And carob powder is kind of like cocoa powder.
01:45 There is no caffeine in
01:46 and it's much, much healthier for you.
01:48 So we're going to add some of this.
01:49 So, Lachlan, if you can add
01:51 quarter of a cup of carob powder?
01:52 Okay.
01:53 So just dip that in there and try and get most of it
01:55 in the blender.
01:56 Should we put this avocado in? Yep.
01:58 Everything in, except for the skins, of course.
01:59 Yep.
02:01 What is...? Sorry?
02:02 What is carob powder made of?
02:04 It comes from carob pod,
02:05 it's kind of grown similar to chocolate pod
02:07 except it's a different kind of a tree,
02:09 I guess.
02:11 So it's great.
02:12 Kind of looks like cocoa powder.
02:14 It looks very similar.
02:16 So I'm going to add half cup of almond milk.
02:19 So there is a half cup.
02:21 You're close so you can add that.
02:23 And we're going to add three tablespoons of honey.
02:26 You could use date puree
02:28 or agave or something like that.
02:29 So I would just add three tablespoons in here.
02:32 One, two, three. Oops.
02:35 We're also just going to add just a little pinch of salt
02:38 just to kind of, you won't even taste it,
02:40 but a little pinch of salt just kind of rounds off
02:42 the avocado in a nice way.
02:44 But that is all our ingredients
02:46 and all we're going to do now is blend.
02:47 So, Lachlan, if you want to push
02:48 the go button, the high button.
02:50 Ready, set, go. Which one?
02:52 No, the high button.
02:53 Oh. Yeah, go.
02:54 Awesome folks. They'll blend away nicely.
03:00 Might need a little more water. Give it a few seconds.
03:03 Lift up the lid here.
03:06 Whoa!
03:09 Put some water, stick it on.
03:12 Let's stop it.
03:14 Let's give it a little bit of a stir,
03:15 sometimes the blender stalls,
03:17 so we're just going to give it a little bit of a stir.
03:18 There is a little bit of air gap at the bottom
03:20 so letting bit more water
03:22 and a bit of a stir is a good way to fix this.
03:23 So put it on again. Now it should be away.
03:27 Here we go, look at that.
03:29 Looking delicious.
03:31 So we're going to use these things here.
03:37 I'm going to stir the mousse.
03:43 It should be done there, you can turn it off.
03:46 Okay, let's get it out.
03:48 That sort of looks like chocolate pudding.
03:50 Exactly. Well, it's a chocolate mousse.
03:51 So you guys want to try it? Yes, definitely.
03:54 Take your spoons there and have a little try
03:57 and let me know what you think.
04:00 Does it taste amazing? Umm.
04:04 That is definitely amazing.
04:06 And would you know avocado is in that?
04:08 No. Exactly.
04:09 So if you go to somebody who doesn't like avocado,
04:11 then just don't tell them, they won't even know.
04:13 So we're just going to...
04:14 Lily, if you can just spoon that into these dishes.
04:15 Okay.
04:17 So try and get it evenly among them
04:18 and try to get most of it in the middle
04:19 and kind of not down the sides.
04:21 So if you can spread into there,
04:23 that would be great.
04:24 I'm also gonna add some frozen cherries on top.
04:27 So ideally it would be nice to use fresh cherries,
04:30 but you can get really nice frozen cherries.
04:31 So add those on top so, Lachlan, when Lily finishes it,
04:34 you can put about three on top.
04:36 We need to be adding large,
04:37 large pieces of things to something like this
04:40 but you only want to add odd numbers
04:43 like three or five or seven.
04:46 Generally even numbers like two or four generally
04:47 don't look good.
04:48 Don't know why, it just kind of happens.
04:50 Wait until she has finished then
04:51 you could put it on as well.
04:53 That's looking very delicious.
04:57 Eat it if you want.
04:58 This is the joy of cooking in the kitchen,

05:01 You guys, make sure you clean your hands
05:02 before you go anywhere else with stuff.

05:05 And when you're putting stuff in,
05:06 what Lily is doing which is great,
05:08 is let it fall naturally, don't pat it,
05:09 just let it fall naturally.

05:12 So give it a good dip in there, so get as much out as you can.
05:14 So the next recipe we need to do,
05:16 we are going to make our own hummus.
05:17 I've got another blender here which is very handy.
05:19 We're going to do a quick wash.

05:22 You can buy hummus in the supermarket
05:24 but it tastes 10 times better
05:25 when you make your own fresh hummus.
05:27 Do you know what a hummus is? I never tried it.
05:29 So hummus is like a dip that's made of chickpeas
05:32 or garbanzo beans, so it's really very nice.
05:34 So you got a mouthful there, Lachlan?
05:36 Yeah. It's very good. Excellent.
05:38 Cherries and chocolate go together well.
05:41 So we're going to start by adding some chickpeas
05:43 or garbanzo beans.
05:44 So, Tony, if you can open that with a can opener.
05:47 Here's one here.
05:48 You know how to use a can opener?
05:50 Oh, give it a go.
05:51 Put it here, see if you can work it out.
05:52 Bit of an IQ test. Umm.

06:00 So basically open it up like this
06:03 and then just do down like that.
06:04 So hold that really tight and then turn the handle.
06:08 Look at that, a professional can opener.
06:11 It's great.
06:12 So the ingredients for hummus is basically five ingredients,
06:16 so the number one ingredient is chickpeas or garbanzo beans.
06:19 We're also gonna add
06:21 some four tablespoons of tahini,
06:23 which is sesame seed paste,
06:24 and it's just sesame seeds that have been ground up.
06:27 So get that in there. That should be nearly enough.
06:31 We're also gonna add some lemon juice.
06:32 So, Lachlan, I'll get you in charge
06:33 of the lemon juice.
06:35 You can put those cherries down.
06:36 And we're going to add two lemons.
06:40 So if you can squeeze these up with all your might,
06:43 then when you're squeezing them in,
06:44 I want you to squeeze them
06:45 through your finger to catch the pips, okay?
06:47 Okay. Into this hummus jar there.
06:50 I'm just going to get another spoon
06:51 because we didn't get quite enough tahini out of this,
06:53 it's nearly finished.
06:55 So we'll just put in some as well.
06:57 So you can drain the water out of it in this thing,
07:00 so just tip it out there.
07:04 How is that chocolate going there, Lily?
07:06 Is all out? Pretty good.
07:07 Almost. Keep going.
07:08 I think there is some more in there.
07:10 Yep.
07:11 So is a chickpea a bean or a nut?
07:13 It is actually more of a bean. It's kind of like a bean.
07:15 They're actually called, garbanzo bean is what
07:17 they are called as well.
07:18 Okay. So put those in there.
07:20 I'll give you a hand here with this.
07:23 Use all your strength, all that rugby strength.
07:25 That's awesome. So fire those in there, Tony.
07:27 Just gonna add some.
07:29 Yep, put it straight in the blender,
07:30 the chickpeas. Gonna add some water.
07:33 All of them? Sorry?
07:34 All of them? All of them, yep, definitely.
07:37 I'm going to add half a teaspoon of salt.
07:39 So this is your basic kind of hummus recipe
07:41 and it kind of is very versatile.
07:44 I'm also going to add some coriander,
07:48 or just coriander powder.
07:50 It is here somewhere.
07:52 And this coriander powder
07:53 will just add a little bit of extra flavor as well.
07:56 So it's probably right about half a teaspoon
07:58 coming out there.
08:00 And that's everything in there.
08:01 It's very hard. Yep, it's good that we're done.
08:04 So let's get it blending. Excellent.
08:07 And it's going high.
08:09 And we have made our own hummus,
08:10 look at that.
08:12 You may need to add a little bit
08:13 more water sometime
08:14 but I think we've got the right balance.
08:17 While it's just going around, just a little bit more.
08:19 So, Lachlan, got to wash your hands
08:21 with those cherries on that.
08:23 You got lemon juice here.
08:26 Just give this a little bit of a stir.
08:28 Okay.
08:29 And this will be right. Just need here.
08:31 Yeah, bubble at the bottom unblocked.
08:33 So, Lachlan, if you can put the cherries on the dessert.
08:36 Yes.
08:37 There we have our very own homemade hummus,
08:41 look at that.
08:43 So we're just gonna put this in here
08:45 into this bowl for hummus.
08:47 We're going to serve along side with it.
08:48 Do you think I can try it? Yeah, go for it.

08:51 Put a spoon in and tell me what you think.
08:54 Is it good? Hmm.
08:56 It's really good. Homemade hummus is awesome.
08:58 So the hummus, we got the crispy tempeh here.
09:01 These vegetables are going to have
09:02 some whole meal tortillas
09:04 and we got the dessert and our meal is ready to serve.
