00:02 we are cooking up a storm in the kitchen
00:05 with Seth and Abby from Idaho and Fiona from California.
00:09 What is on the menu today, guys?
00:11 We have curried corn with zucchini fritters
00:14 with avocado salsa.
00:16 And for dessert,
00:18 we have fruit salad glasses with pineapple cream.
00:21 Yeah, I told you.
00:23 It sounds so good. I know.
00:25 So we need to make the guacamole now,
00:27 so we'll just have a little bit of a clean-up here.
00:29 I'll just put the stuff here. Guacamole.
00:30 Guacamole. Guacamole.
00:32 So do you guys like avocados?
00:33 No. Yeah.
00:35 Yeah. It depends on what they are on.
00:36 Okay, we'll have a look.
00:38 I don't like eating plain avocados.
00:39 What is all this?
00:40 So just gonna pot ingredients into here.

00:43 At first have a little bit of a clean-up here with this.
00:44 We'll get the flour off here.

00:50 Wooden cutting boards are great 'cause they actually have
00:52 natural germ inhibitors in them,
00:53 so they're the best top to have, better than plastic.
00:55 Oh, I don't like the juices would like make them rode,

01:01 I'm gonna here, so I'm just gonna cut in half.
01:02 The best to do an avocado... My dad loves avocados.

01:07 You cut it in half like this and then open it up like that.

01:16 We need to make sure you don't have your hand in there close,

01:22 I'm actually seeing some brown bits here,
01:23 so we're just going to cut some of the brown bits off
01:26 and these here, I'll get Fiona to cut this.
01:29 Can you cut this into really, really small cubes?
01:32 So cut it really small that way and really small that way.

01:36 It's kind of a meaty thing, a guacamole,
01:37 but we're going to do rather than the mashed one,
01:39 it's going to be more of a kind of a cubey guacamole,
01:41 so we've got those, also got some tomatoes here.
01:43 Tomatoes.
01:45 And vine tomatoes are the most flavorsome.
01:47 These look really, really good.
01:48 Don't they look really nice and ripe?
01:50 And they've got vines on them as well.
01:51 Oh, really good.
01:53 So, Seth, if you can chop these up there.
01:55 I'll get you a knife. You want a big knife or a little knife?

02:00 So if you can actually chop those up into cubes.

02:03 So just basically do little slices like that
02:07 and then turn them over
02:08 and then do them into cubes like that
02:12 and put them into the bowl there.

02:15 Are we going to use the rest of this pepper?
02:17 Meanwhile, no, we're not going to use

02:20 Meanwhile we've got this here, we're just going to do
02:21 a quick spray over to give a little bit of oil
02:23 and then we're just going to flip
02:25 these little fritters here.
02:26 That looks easy, is it?
02:27 Look at this guys, the fritters are flipping.

02:30 Let's turn and see what they're doing.

02:41 I'll get you guys to make the next batch.
02:43 So we got, the guacamole is under way.
02:45 Next ingredient for the guacamole
02:46 that's really important is lime juice.
02:48 Lime juice. I can put that in.

02:52 So just cut it into half and if you can...

02:56 Not put it into that dish, into the bowl there

02:59 try and get without getting cut by one of those big knives.

03:10 There you go, so lime juice makes guacamole taste great.

03:33 We're making a great mess in the kitchen.
03:35 That's what cooking is all about,
03:36 it's making lots of mess.
03:37 Well, obviously we're going to clean up after ourselves.

03:43 So if you want to get really sharp knives,
03:45 I'll put the rest of the tomato and the avocado in the bowl
03:48 and those are ready to go.

03:54 I'm just going to chop some cilantro here as well to go in.

04:00 and just gonna chop some cilantro stalks as well.
04:02 I saw an avocado get in there, I mean,

04:09 Brilliant, so it's in there as we'll.
04:10 I'm just going to put a bit of olive oil.
04:12 Oh, this feels so squishy and weird.
04:17 A little bit so you can wash your hands definitely.
04:19 Yeah. Please look. Look at them.
04:21 Oh, okay, why everybody's pouring on me.
04:24 Now I have sauce.
04:26 I'm going to mix this together and this is a beautiful
04:27 little salsa that's going to go on these corn fritters.
04:33 That's great, guys. Keep pouring things on you.
04:36 So these are ready as you can see,
04:38 so I'm just going to put them over here,
04:39 on this pan here
04:41 and, Seth, can you make up some more ones for us?

04:45 So nice soothing pan,
04:46 so if you want to put some sprinkles in there,
04:48 just a bit of oil.

05:09 Avocado and tomato, and salt and different types of stuff.
05:14 Exactly, so we're going to make fruit salad glasses

05:18 and bring those around here?

05:21 And what we're gonna do is
05:22 make a really, really yummy quick dessert.

05:36 So we got some beautiful fruit here.
05:38 So we're going to start with some...

05:43 Now that is beautiful, that's wonderful.

05:45 Papaya, I think yeah. What's this inside of it?

05:53 And we've got some raspberries here as well.
05:55 These seeds feel so weird.
05:57 Raspberries. They're not very nice ones.
05:59 We'll use another one, these aren't very nice ones.
06:00 See if you can find some raspberries out of the freezer,
06:02 out of the fridge. Nice ones.
06:04 They're fillings.
06:05 We'll start with blueberries then.
06:07 So, Fiona, if you want to keep it
06:08 say a handful of blueberries at the bottom of those glasses.
06:10 These feel so weird. They do, don't they?

06:15 And we're just gonna scoop them out.
06:17 Here we go, we'll just...

06:20 They look like little tiny pooh I guess.
06:23 They're kind like peppercorns, aren't they?
06:24 Yeah. Here we go.
06:26 So just gonna put some papaya in.
06:28 Open up, are they good ones?
06:30 They look like olives or something.

06:36 We're going to take the raspberry out of this one.
06:37 The raspberries have gotten moldy for some reason,
06:39 so we're going to use some, get some strawberries,
06:41 try strawberries.
06:42 There's some strawberries in the fridge.
06:44 They go in the rubbish. They're not very nice at all.
06:47 Is this enough?
06:48 Few more will be nice and some bit of papaya.
06:51 So we're going to chop the fruit kind of really,
06:53 kind of quite thinly
06:55 and we're gonna cluster together,
06:56 not like a fruit salad
06:58 but just have cluster of different fruit.
06:59 So see if you can put this papaya in these glasses.
07:04 Seth, if you want to put that,
07:06 just put a little bit on the bottom there.
07:07 How's this? How are these?
07:09 On top of the blueberries.

07:12 Oh, these are beautiful strawberries, look at that.
07:13 They're big and ripe.
07:14 They are. They are brilliant.
07:17 This looks like came out well.
07:19 Can I try a piece of this? So this is not blueberry.
07:21 These are different blueberries.
07:22 Oop, blueberry is done. Can I try a piece of this?
07:24 Yep, you can try a bit of that
07:26 and then we're going to add some strawberries.

07:29 Not much blueberry is left.

07:34 and see if you can put these strawberries on.

07:39 So probably around about four to five pieces per glass.

07:45 There we go and I've got some lovely peaches here as well.

07:51 So, again just chopping them up into small pieces.
07:54 Running out of time so I'm having to do
07:55 the chopping here, guys.
07:58 So if you're going to put some of those in the glasses,

08:03 beautiful blackberries here as well
08:05 so, Fiona, if you can do some blackberries.
08:06 Around equal. As equal as you can get them.
08:09 That's looking great, isn't it?
08:11 So we're also going to make a pineapple cream.
08:13 Blackberries.
08:15 A pineapple is different.
08:16 So just you can add any fruit. Oh, I have a kiwi fruit.
08:20 And kiwi fruit comes from where?
08:21 Kiwi? I think they come from...
08:23 New Zealand.
08:25 That's why they call New Zealanders Kiwis.
08:28 I didn't know that. I will cut the other one?
08:31 I think there's probably enough fruit there for now.
08:33 We'll just add some green and green is a color
08:36 that really adds great color to dishes.
08:39 So we got some kiwi here as well.
08:41 You guys call it kiwi, don't you?
08:42 Kiwi. We call it kiwi fruit.
08:44 This is same thing.
08:45 So again, we're just chopping it up into thin.
08:47 And when you're chopping you want to keep
08:48 the edges nice and square so handle it delicately
08:50 so we're gonna spread that over there as well.
08:54 And to make this pineapple cream,
08:56 all we've got here is crushed pineapple.
08:58 You've seen this in the supermarket.
09:00 What does it say there?
09:01 Hundred percent pineapple juice.
09:03 Exactly.
09:04 Some pineapple juices have lots of sugar in it
09:05 so we don't want that.
09:07 So we're just gonna put this in here
09:08 so it's just pineapple juice and pineapples really...
09:10 I got some. Like that.
09:12 Can we serve?
09:13 And were going to add some cashew nuts.
09:15 Oh, I can smell when it came in.
09:16 Can I wash my hands again?
09:18 You can wash your hands again.
09:19 And we're just going to blend this
09:21 and it is going to become a really nice pineapple cream
09:25 that we can put on there.
09:28 Wow.
09:29 And while that's going, there you go.
09:33 And what we'll do is drizzle it over the top
09:35 and it will be beautiful.
09:36 Nice.
09:38 And then what we do is keep this lovely salsa here
09:40 and we'll finish some of those
09:42 other fritters off in the break,
09:43 and we're just gonna put this beautiful decoration on here,
09:46 so it looks lovely
09:47 and we'll put a little bit of herbage on later.
09:49 And this would just look amazing.
09:50 What do you think, guys?
09:52 I think it's good. I think it looks good.
